Hawaiian Chicken

INGREDIENTS

Chicken:

  • 700g boneless skinless chicken thighs
  • 60g soy sauce
  • 60g water
  • 50g brown sugar
  • 1/2 tsp minced garlic
  • 1 tsp sesame oil
  • 120g light coconut milk
  • 60g pineapple juice
  • 1 tin 565g SUNSTAR PINEAPPLE SLICES

Coconut Rice:

  • 1 cup white rice or basmati rice
  • 300g light coconut milk
  • 120g water
  • 3/4 tsp kosher salt
  • Cilantro leaves and lime wedges for garnish (optional)

 

INSTRUCTIONS

Chicken: 

  1. Combine the soy sauce, water, brown sugar, garlic, sesame oil, coconut milk and pineapple juice, then pour into a resealable bag.
  2. Add the chicken into the same resealable bag. Marinate for minimum 2 hours.
  3. Heat the grill to medium. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until chicken is cooked through.
  4. Add the pineapple to the grill and cook for 2-3 minutes per side.
  5. Arrange the pineapple and chicken on a serving plate.

Rice: 

  1. Pour the coconut milk, water, salt, rice into a rice cooker or pot to cook till rice is soft.
  2. Serve the chicken and pineapple with the coconut rice. Garnish with lime wedges and cilantro if desired.
